A Quick Dinner Idea

Not the dinner, but a picture of one of my fruit bowls I've made, enjoy! Recipe below👇

 I am not a fan of cooking, but I love eating.  So I definitely prefer quicker, easier meals.  Here's a recipe I've created because.

I love sausage and veggies so I decided to mix them together.


SAUSAGE BAKE

sausage links (though you can use ground.  I usually do blueberry sausage but have done other flavors as well.  the links, I tend to not pre cook as a lot of them are already pre cooked.)

**Note if using ground sausage cook in fry pan first til browned than add to veggies for their last 15 mins cook time.

veggies chopped up bite size-ish to large diced

    I use carrots, mushrooms, peppers, onions, potatoes, sweet potatoes

toss all veggies together with a drizzle of oil, salt and pepper to taste. 

  (sometimes I add seasonings such as italian seasoning, ranch seasonings etc. depends on my mood)

layer a cookie sheet in tin foil (or parchment paper) add the veggies and sausage,

cook 450F for about 25-28 minutes until the sausage is cooked through and veggies are tender.

TaaDaa! Easy Peasy...  Serve. Sometimes I pour some real maple syrup on it, but that's a personal preference, try it you may enjoy it.. 


As you can see I'm very not methodical, I just kind of let my thoughts take me to what ever direction it wants. Sometimes it works like this dish and other times, hmmm not so much. Unfortunately I don't have any photos of the dish, but I will add one later when I make the dish again.. Enjoy and Stay colorful!


PUMPKINS! Is it too early for fall???

 I love pumpkins, they're so representative of the fall season, as well as just a playful and a varied fruit. They actually fall into the same family as melons and cucumbers. 

You can get tiny ones, large ones, you can decorate them, smash them, paint them, bake them, steam them and can them so many fun things to do with pumpkins.. Most of the pumpkin is edible.  

No matter their legends or uses; pumpkins ALWAYS remind me of fall and are a nostalgic memory trigger for my childhood.  How many of you have the same memory trigger?

My favorite pumpkin🎃🎃 recipe is;

No Bake Pumpkin Cheesecake

Ingredients

  • 8 oz cream cheese softened
  • 1 cup milk 
  • 1 TBSP milk
  • 1 TBSP sugar
  • 1 TSP vanilla
  • 8 oz whipped topping
  • 1 prepared graham cracker crust
  • 15 oz canned pumpkin
  • 2 pkgs instant vanilla pudding [4 servings size each]
  • 1 TSP ground cinnamon
  • 1 TSP pumpkin spice

Instructions

  • Beat together:  cream cheese, 1 tablespoon of milk, sugar, and vanilla in a large bowl. Fold in ½ of the whipped topping and spread in the graham crust.
  • Whisk together 1 cup of milk, pumpkin, dry pudding mixes and spices until creamy. Spread over the cream cheese layer.
  • Top with the remaining ½ tub whipped topping and refrigerate for at least 4 hours.

TBSP = tablespoons

TSP = teaspoons

OZ = ounces
